These pages are static files on GitHub Pages. There is no backend, no database, and no analytics on your input, which means your text and audio physically cannot be sent anywhere. That is the same principle behind OpenFlow itself: your voice is yours, and processing it locally is almost always possible now.
A few tools use your browser's built-in speech recognition, which usually does transcribe in the cloud. Those pages say so plainly, because the honest version of a privacy claim includes its exceptions.
